The Cynthiana Strong Southwest Omelet
Approx 206 calories
1 Egg White
1 Tbsp Black Beans
1/3 cup frozen corn
1 Tbsp chopped banana peppers
1 Spicy Monterray Jack Laughing Cow Cheese Triangle – cut into pieces
Ground red pepper (to taste)
Onion powder or fresh chopped onions if you have one handy (to taste)
3 Tbsp Salsa
Mix egg and egg white together. Set aside.
In small skillet, add black beans, frozen corn, chopped banana peppers, red pepper and onion powder. Heat until warm. Remove from skillet and set aside.
Spray skillet with non-stick cooking spray. Add eggs. Pour bean mixture onto one half of the egg. Add the cheese on top of the bean mixture.
Once the edges of the egg are cooked and will hold shape, fold the half of the egg with no beans onto the top of the bean mixture. Cook until eggs are done.
Plate the omelet. Add salsa on top.
